Our editors share 17 easy weekday dinner recipes so that you can strive tonight

If you want to take a look at what our team’s Zoom calls look like, have you read our Links + Loves Summaries first ?! Because that’s what they sound like. But second, we exchange a lot of recipes. Sometimes out of excitement (this recipe was so good), sometimes out of success (my kids really liked it), and sometimes out of relief (I found a simple weekday dinner recipe that didn’t turn my kitchen into a war zone).

Everything overlaps in this list of our favorite recipes: delicious, family-friendly, and something easy or quick. Our team put together the recipes that we have cooked more than once and found that they are worthwhile in every way. We all have families – some of us with picky children (or picky husbands) – and some of us like to cook while others prefer to eat. But ALL of us have been in the kitchen a lot more during these pandemic times and the Kochlut is real. With that in mind, we hope you find something new this week to add to your menu!

This dinner is perfect for both adults and children. I mean baked chicken fingers with pretzel crumbs and a flavorful sauce – the sauce is so good. My girls are not fans of it, so more for the adults! I combine this with grilled broccolini and everyone is happy. – Jen

Who says you can’t make a delicious salad in winter? It’s citrus time! This roasted citrus and beet salad with goat cheese is currently our favorite salad recipe. It has so many delicious flavors. – Jessi

This simple classic Italian caprese salad recipe is everything my husband and I eat in summer. We always add a side of melon – it sounds weird, but trust me. It’s an authentic Italian staple that will get you straight to Lake Como! – Jessi

On cozy Wisconsin winter nights, we love bundling up and slurping this amazing Chicken Dumpling Soup recipe from Half Baked Harvest. Sage in winter is my absolute favorite herb! – Danielle

This is a soup that both deserves a dinner party and is great for a quick kid friendly dinner. I’ve made it several times. It’s the most popular recipe on one of my favorite blogs, The Modern Proper, and for good reason. (Another favorite soup is this Whole30 Zuppa Toscana soup from All the Healthy Things. I’m obsessed with salmon but always feel like I’ve overcooked it. This Half Baked Harvest Salmon Thai Curry is amazing because you poach the salmon in the curry stew and cook it wonderfully. Juicy, spicy, cozy + fresh. It does require some basil, but cilantro works well too! – Danielle

Favorite weekday dinner for repeats: Homemade Pizza with Trader Joe’s Dough

A simple weekday dinner for us is Trader Joe’s pizza dough with pizza sauce and shredded mozz. My husband likes to add peppers and mushrooms, but I like plain cheese. Or try this burrata pie or a white pizza with ham and hot honey if you want something special! You can find the dough in the cooling area with packaged soups and salads. – Katie

Tacos are life for my family. If you’ve never made carnitas before, this is my favorite recipe. Plus, I always have scrumptious leftovers for bowls, quesadillas, omelets, etc. It takes a while But the wait was so worth it. -Brittany

This one is easy to make and tastes so good! My whole family loves it (which can be tricky with 4 and 7 year old girls!) I love serving the meatballs over farro and definitely adding some hot naan bread to it. Yum! – Jen

Beef Bulgogi Bowls – a simple weekday recipe from Hello Fresh

One of our favorite recipes that we get in our Hello Fresh box are beef bulgogi bowls. There’s a lot of flavor in this one and I love a good bowl recipe. – Katie

Cheese ice cream simply has something to offer. Sometimes I baked this weekly. It warms up deliciously for leftover food and is topped with TJ’s Everything Bagel Seasoning so it’s basically perfect. Try broccoli too! -Brittany

Easy weekday recipe: kale pesto with grilled chicken

One meal we’ve been making for years that is simple, healthy, and loved by everyone is grilled chicken with pesto. I make my pesto with kale (instead of basil) and pistachios (instead of pine nuts) and Israeli couscous (works well with quinoa too, but my girls aren’t fans of quinoa). – Jen

Another easy meal for Trader Joe fans? Buy the mushroom risotto from Trader Joes; Add extra mushrooms, grilled chicken and top with some truffle salt and parmesan. SO SIMPLE and super tasty. – Jen

Aside from pizza, this Kielbasa Fried Rice is my family’s fastest, most affordable end-of-week dinner. It’s such a simple weekday recipe and goes well with Netflix and wine. -Brittany

I’m not even going to tell you how many times I’ve made this creamy chicken and gnocchi casserole this month because it could be pretty embarrassing. It’s our go-to place for the ultimate in winter comfort food. I usually add sauteed zucchini for extra vegetables. – Jessi
